蔬菜的硝酸盐污染及其控制措施

摘    要:硝酸盐对人体健康危害极大。蔬菜中的硝酸盐含量比其它作物高,但不同种类蔬菜对硝酸盐的积累有很大的差异。我国大城市郊蔬菜的硝酸污染较严重,主要原因是偏施氧肥,也与土壤、气温、光照及蔬菜种类等有关。应从合理施用肥料等5方面采取措施,控制蔬菜中的硝酸盐含量。

Abstract:Nitrate is hazardous deeply to people's health. The content of nitrate in vegetables is higher than other crops. But different kinds of vegetables have different accumulation ability of nitrate. There is serious nitrate pollution in most cities of China. The main reason is fertilizing too much nitrogen fertilizer, and it also relates to the soil, air temperature, the light and different vegetables. We should fertilize in reason and carrying out other measures to control the content of nitrate in vegetables.
