Odorous volatile components in Ayus fish

Abstract:Volatile components in Ayus (fish in Japan) having bad smell were analyzed by freeze‐vacuum distillation and gas chromatography/mass spectrometry to clarify the origin of the smell. Nitrogen heterocyclic compounds might be the origin.
