Abstract:It has been known that polycyclic aromatic hydrocarbons(PAHs),the carcinogenic chemicals,are likely formed during roasting meat.This paper elaborated on a quick determination method using solid phase micro-extraction(SPME)with activated carbon fiber(ACF)as pretreatment for GC/MS analysis of PAHs.Optimal condition for SPME-ACF was studied using orthogonal array test.16 PAHs in the roast samples were separated and quantified from the samples,and the method was characterized with the recovery ranging from 83.7...
