ABSTRACT

The global industrial food system is increasingly recognised as a source of poor health that deepens social and economic inequity. Health advocates, policy makers, and food activists strive to improve nutrition and food access across racial and ethnic divides; however, given established approaches, they may miss fundamental pathways for improving health and justice comprehensively. While food access and nutrition are often identified as primary concerns for marginalised communities and the reason for food insecurity and food-related illness, critical food justice scholars use a more expansive lens to suggest a democratised food system is needed, and that solutions based solely in access to healthy food can undermine more systemic approaches. Our research extends this analysis, highlighting the importance of endemic food culture (foodways) as a tool for retaining identity, building community, and maintaining health among refugee populations in one community in Salt Lake City, Utah. Further, this work suggests that community engagement and expertise is essential in leveraging foodways such that marginalised communities can effectively resist cheap, unhealthy, and placeless calories.  相似文献

In this essay, I offer reflections inspired by The Garden, a compelling film documenting the failed struggle of the South Central Farmers to maintain a lush 14-acre farm within an industrial, impoverished neighborhood of Los Angeles. I concentrate on diverse representations of resistance featured in the film, which range from the traditionally mediated to more immediate or material-rhetorical acts. Taking the lead of the South Central Farmers, I conclude that we (as scholars, teachers, and ethical people) may combat the corporate food system with a multifarious approach to social change.  相似文献

ABSTRACT

To understand haze-related online communication in Southeast Asia, this exploratory study took a mixed method approach to conduct web analysis of online communication during haze crisis in Singapore, followed by textual analysis of traditional and new media content during peak days. First, web analytics showed that Singapore’s haze online communication occurred mostly on the Twitter platform with primary negative sentiments. Next, textual analysis results found that majority of traditional media-affiliated news provided informative haze reports and centered on positive measurements taken by government and authorities, similar to Public Information Model for crisis management. In comparison, haze-related new media content had diverse topics reflecting laymen’s viewpoints with critical tones and negative sentiments. News portals and blogs used two-way asymmetrical and symmetrical model for crisis management, respectively. Additionally, Social Cognitive Theory’s media diversity perspectives were applied to understand people’s media choices among traditional and new media during natural crisis with environmental influences.  相似文献

The objective of this study was to study the performances of six 200-L polyethylene bins, each with different design for passive aeration to organic wastes composting. Food scraps and dry leaves (1.6 kg) were added to each bin once a day until the bin was full. Temperatures at the middle portion were measured daily. The compost from each bin was taken once a week for 120 days for analysis of C, N, volatile solids, and a germination index once a week for 120 days. After 120 days, the compost sample from each bin was taken to determine the mass reduction, size distribution, CEC, N, P and K values. The results showed that the temperatures inside the bins were in the ranges of 24 °C-57 °C. The composts in all bins were found to be stable at around 56-91 days. The wastes decayed fastest in bins with lateral and vertical systems of natural ventilation. It took about two months to stabilize the organic wastes, with a 59-62% decrease of mass. The C/N ratio, CEC, N, P, and K values of the final composts were 14.8-16.0, 66-68 cmol/kg, and 1.26-1.50% N, 0.52-0.56% P2O5 and 1.66-1.92% K2O, respectively.  相似文献

Food and drink waste is a significant problem for economic, environmental and food security reasons. Government efforts have focused on diverting waste away from landfill through regulation, taxation and public awareness. However, efforts to understand why waste occurs have been limited, particularly in the interface between retailers and suppliers. This research aims to address this problem by identifying the main root causes of waste in the supplier-retailer interface.The research is exploratory in nature as there is a paucity of studies focusing on food waste across the supply chain. Data were collected through 43 interviews with managers in food manufacturing, wholesaling and retailing in two countries: the UK (24) and Spain (19). Data from the interviews and supplementary documentation were analyzed using causal maps. This approach helped to identify the main root causes of waste which were categorized into three groups: (1) mega-trends in the marketplace, (2) natural causes related to the products and processes, and (3) management root causes on which practitioners have a direct impact.The paper discusses the root causes of food waste and good practices identified from the interviews. Differences between the UK and Spain are discussed, presenting potential learning opportunities for practitioners in these countries and highlighting opportunities for further research.  相似文献

In the present work we investigate whether the distribution of energy flows in ecosystems responds to criteria of trophic organization. We analyzed weighted and unweighted food webs estimating, for each node, trophic position (TP), Shannon's index of inflow diversity (H) and individual contribution to the whole average mutual information (AMI). Finally, we performed the same analysis on simulated webs that were constructed using the following criteria: (a) preserving topology and varying link strength; (b) modifying position of links and their intensities.  相似文献

Complex marine ecosystems contain multiple feedback cycles that can cause unexpected responses to perturbations. To better predict these responses, complicated models are increasingly being developed to enable the study of feedback cycles. However, the sparseness of ecological data often limits the direct empirical parameterization of all model parameters. Here we use a Bayesian inverse analysis approach to synthesize empirical data and ecological theory derived from published studies of a coral atoll's enclosed pelagic ecosystem (Takapoto Atoll, French Polynesia). We then use the estimates of flux magnitudes to parameterize probabilistic compartment models with two forms of heterotrophic consumption: (1) “bottom-up” donor-controlled heterotrophic consumption and (2) “top-down” mass-action heterotrophic consumption. We explore how the flux magnitudes affect the ecosystem's stability properties of resilience, reactivity, and resistance under both assumptions for heterotrophic consumption. The models suggest that the microbial uptake of dissolved organic carbon (DOC) regulates the long term rate of return to steady state following a temporary or pulse perturbation (resilience), and the cycling of carbon between abiotic pools and heterotrophic compartments regulates the short-term response (reactivity). In the bottom-up process model, the sensitivity of steady state masses following a sustained or press perturbation (resistance) is highest for the DOC pool following a sustained change to the microbial uptake rate of DOC. Further, a change in the microbial uptake of DOC propagates through the ecosystem and affects the steady state values of zooplankton. The analysis suggests that the food web is highly dependent on the recycling between the abiotic and biotic carbon pools, particularly as mediated by the microbial consumption of DOC, and this recycling determines how the ecosystem responds to perturbations.  相似文献

The main principle of the economic approach to a trophic system we propose here lies in assuming that there is a transfer of food along a path between a prey and a predator if, for the predator, the benefits are greater than costs of predation on this path. Conversely, if the costs exceed the benefits, there are no flows. This trade-off, considered all along the food chains of an ecosystem, together with ecological processes (assimilation, somatic maintenance) results in a model coupling mass balance equations (biological constraints) and complementarity principles (Walras’ law). In planktonic food webs, the conversion rate of plant material to herbivore biomass is determined by a variety of factors such as seston biochemical/elemental composition, phytoplankton cell morphology, and colony architecture. Despite the overwhelming heterogeneity characterizing the plant–animal interface, plankton population models usually misrepresent the food quality constraints imposed on zooplankton growth. In this study, we reformulate the zooplankton grazing term to include seston food quality effects on zooplankton assimilation efficiency and examine its ramifications on system stability. Using different phytoplankton parameterizations with regards to growth strategies, light requirements, sinking rates, and food quality, we examined the dynamics induced in planktonic systems under varying zooplankton mortality/fish predation, light conditions, nutrient availability, and detritus food quality levels. In general, our analysis suggests that high food quality tends to stabilize the planktonic systems, whereas unforced oscillations (limit cycles) emerge with lower seston food quality. For a given phytoplankton specification and resource availability, the amplitude of the plankton oscillations is primarily modulated from zooplankton mortality and secondarily from the nutritional quality of the alternative food source (i.e., detritus). When the phytoplankton community is parameterized as a cyanobacterium-like species, conditions of high nutrient availability combined with high zooplankton mortality led to phytoplankton biomass accumulation, whereas a diatom-like parameterization resulted in relatively low phytoplankton to zooplankton biomass ratios highlighting the notion that high phytoplankton food quality allows the zooplankton community to sustain relatively high biomass and to suppress phytoplankton biomass to low levels. During nutrient and light enrichment conditions, both phytoplankton and detritus food quality determine the extent of the limit cycle region, whereas high algal food quality increases system resilience by shifting the oscillatory region towards lower light attenuation levels. Detritus food quality seems to regulate the amplitude of the dynamic oscillations following enrichment, when algal food quality is low. These results highlight the profitability of the alternative food sources for the grazer as an important predictor for the dynamic behavior of primary producer–grazer interactions in nature.  相似文献

Exploring the response of an ecosystem, and subsequent tradeoffs among its biological community, to human perturbations remains a key challenge for the implementation of an ecosystem approaches to fisheries (EAF). To address this and related issues, we developed two network (or energy budget) models, Ecopath and Econetwrk, for the Gulf of Maine ecosystem. These models included 31 network “nodes” or biomass state variables across a broad range of trophic levels, with the present emphasis to particularly elucidate the role of small pelagics. After initial network balancing, various perturbation scenarios were evaluated to explore how potential changes to different fish, fisheries and lower trophic levels can affect model outputs. Categorically across all scenarios and interpretations thereof, there was minimal change at the second trophic levels and most of the “rebalancing” after a perturbation occurred via alteration of the diet matrix. Yet the model results from perturbations to a balanced energy budget fall into one of three categories. First, some model results were intuitive and in obvious agreement with established ecological and fishing theory. Second, some model results were counter-intuitive upon initial observation, seemingly contradictory to known ecological and fishing theory; but upon further examination the results were explainable given the constraints of an equilibrium energy budget. Finally, some results were counter-intuitive and difficult to reconcile with theory or further examination of equilibrium constraints. A detailed accounting of biomass flows for example scenarios explores some of the non-intuitive results more rigorously. Collectively these results imply a need to carefully track biomass flows and results of any given perturbation and to critically evaluate the conditions under which a new equilibrium is obtained for these types of models, which has implications for dynamic simulations based off of them. Given these caveats, the role of small pelagics as a prominent component of this ecosystem remains a robust conclusion. We discuss how one might use this approach in the context of further developing an EAF, recognizing that a more holistic, integrated perspective will be required as we continue to evaluate tradeoffs among marine biological communities.  相似文献
