猪血酶解工艺研究

摘    要:用研制成功的复合酶和酶解工艺技术,将难于消化的猪血蛋白质水解成18种氨基酸和部分低肽的固体产品,富含铁、铜、锰、锌等微量元素,血蛋白消化吸收率从20%左右提高到95%以上,蛋白质水解率99.5%,产品中氨基酸总量85.5%,其中8种必需氨基酸含量36.1%,产品微生物和理化指标均符合国家食品卫生标准,生产工艺先进合理、生产成本低、对环境无污染.

Technological Research of Hydrolytic Enzyme of Swine Blood
Abstract:With the new technology of compoound enzyme, the protein in swine blood can be degraded into 18 types of amino acids and low peptide. This technology can increase the digestibility of swine blood from 20% to 90%, and the rate of protein hydrolysis can reach 99. 5 %. In production,the proportion of amino caid is 85. 5 % and 8 essential amino acids is 36. 1%. The index of microorganism and chemistry is accord with Nation Fed Hygiene demands. This advanced technology is no pollution, especially, the production cost is low.
